Recipe: Shepard's Pie

Shepard's Pie

2 lbs potatoes, peeled and cubed
3 lbs ground beef
1 yellow onion, diced
2 cups corn, cooked
1 1/2 cups plain yogurt
Salt and pepper to taste

Preheat oven to 350 F. Brown ground beef and drain. Add onions and simmer until they are clear. Season with salt and pepper to taste. Boil potatoes until they are tender enough to break with a fork. Drain potatoes and mash. Add yogurt and whip until well blended. Add salt pepper to taste. In a baking pan spread the beef on the bottom. Layer the corn next and top with potatoes. Bake for 30 minutes. Serve warm.
