Recipe(tried): Shirley's Meatballs (large quantity)

Shirley's Meatballs

10 lbs Hamburg
2 cups minute rice cooked
1 box of onion garlic or just onion soup mix (2 envelopes in box)
1/4 cup of Soya sauce
1/8 cup of Worcestershire sauce
Huge dash of garlic powder about 1 tablespoon

Mix all ingredients... Roll into small balls...size that's easy to pop into mouth Place in a pan.... not the non stick kind...making sure they don't touch each other Cook at 300 for 10 minutes... move them around...doesn't matter if they touch now Cook for 10 more minutes. I freeze these in freezer bags and just grab and thaw for company or for supper.

Sauce:

Easy sauce... buy 2 bottles of Chinese "sparerib sauce" pour over them and heat.

Or try my........

Special Sauce

2 cups vinegar
2 cups sugar
Heat till it comes to boil...stirring almost constantly.
Add 4 cups water
And slowly add 6 ounces of ketchup
OPTIONAL.....for looks a diced sweet pickle thrown in.

Thicken with cornstarch and water mixture till very thick and do this very slowly and stirring
constantly...so the cornstarch doesn't lump.

You can freeze both the sauce and meatballs together or separately.

NOTE:
the sauce takes a long time to thaw and you do have to stir constantly as it thaws.
Suggestion re: onions in your recipes - I use onion soup mix in most of my crowd recipes for the flavour as a lot of people don't like onions but don't seem to mind the onion soup mix at all.
The above recipe makes about 250 small meatballs or about 150 of the larger size. Add about 10 mins. cooking time if you are making them larger
