Recipe(tried): Shredded Green Plantain Fritters (Aranitas de Platano) for Coco
Side Dishes - AssortedSHREDDED GREEN PLANTAIN FRITTERS
(ARA ITAS DE PLATANO)
6 tablespoons butter, melted, divided use
2 garlic cloves, peeled and chopped
1 tablespoon brandy (optional)
3 medium green plantains, peeled
salt and black pepper to taste
3 tablespoons corn or vegetable oil (for frying)
Combine 4 tablespoons of the butter with the garlic and brandy and set aside.
Coarsely grate the plantains into a bowl and season with the salt and pepper to taste. Heat the oil in a skillet until it is hot but not smoking.
Press 1/4 cup of the grated plantain at a time in your hands to form a small patty.
Fry in the hot oil until golden brown, turning once to make sure it cooks evenly. Repeat with the remaining aranitas.
TO SERVE:
Arrange the aranitas on a platter and brush with the melted butter sauce or serve it alongside for guests to dip the ara itas.
