Recipe: Shrimp with Orzo and Feta Cheese

SHRIMP WITH ORZO AND FETA CHEESE

1 1/4 lbs. fresh medium-size shrimp in shells
1 1/2 cups uncooked orzo
1 Tbs. margarine or butter
3 medium tomatoes, coarsely chopped
4 oz. garlic and herb feta cheese, crumbled
1/2 tsp. salt
1/8 tsp. coarsely ground black pepper

Peel shrimp and make a shallow cut lengthwise down back of each - rinse under cold running water to remove vein.

Prepare orzo per package instructions - drain.

In 10-inch non-stick skillet, melt margarine over medium-high heat. Add shrimp, salt, and pepper. Cook 3-5 minutes stirring occasionally until shrimp turn opaque. Add tomatoes - cook and stir 30 seconds. Remove from heat.

Combine drained orzo, shrimp and feta cheese. Toss and serve.
