Recipe(tried): South-of-the-Border Cheese Soup - Chilly weather, Time for my famous SOUP

Hi Everyone! I'm not posting a very dramatic or impressive meal for today, but we enjoy it so much I thought I'd share it anyway. It is so chilly here in North Dakota. I fear our fall is turning into winter already.

Time to plant bulbs in the garden and winterize the house. I'm aready looking forward to Christmas dinner -- it will be my first attempt at the family meal since getting married! I have to confess, I volunteered for this year because I was tired of eating mashed potatoes without GRAVY (can you imagine) at my in-laws. We shall have gravy this Christmas, indeed. Well, enough babbling, here's my meal for tonight!

South-of-the-Border Cheese Soup

1 can (10 oz.) water packed chicken
1 can diced tomatoes and green chiles (Rotel)
1 can (4 oz.) diced green chiles
1 can whole kernel corn, drained
1 can chili beans, do not drain
1 can chicken broth
1 lb American Cheese, cubed (I like low sodium Velveeta)

Combine all ingredients in soup pot, heat over medium heat till everything is hot and cheese is melted! Serve with crushed tortilla chips, sour cream, and/or guacamole!

I'm also serving cornbread, a recipe from my head, so I encourage you to use any of the wonderful cornbread recipes of this site. I'm sure Gina has posted a wonderful one somewhere!
