For a great Southwestern stuffing for chicken, adding celery and more onion or, omitting the cornbread and adding some potatoes, you could make a nice breakfast scrabble with eggs.

CALLIOPE’S SOUTHWESTERN STUFFING

1/2 lb. smoked turkey sausage, chopped
1-large minced garlic clove
1-jalepeno,diced, with some seeds, depending on how hot you like it
....or red pepper flakes if you don’t have a jalapeno
1 red pepper, finely chopped
saute all of the above in olive oil
1-1/2 cups crumbled cornbread (can use purchased corn muffins to save time and effort!)
3 or more, scallions, minced...or red onion or shallot
1/4-1/3 cup chopped cilantro
1/2 tsp., or more, paprika
1/4 tsp. turmeric

Put this stuffing in an omelet...or add some scrambled eggs to it and stuff in a flour tortilla and top with sauce and cheese of choice.
