Huevos Rancheros (Ranch-Style Eggs)

2 ripe tomatoes
1 small hot chili pepper
1/2 small onion -- diced
1 clove garlic -- unpeeled
1/2 cup cilantro -- chopped
4 eggs
grated Monterey jack cheese
6 corn tortillas* -- heated
salt
pepper

*NOTE: Warm tortillas over a hot griddle or place covered in a microwave oven for 45 seconds. Flour tortillas can be substituted.

Prepare the salsa by charring the tomatoes, garlic, and hot pepper on an open flame or griddle, turning until all slides are charred but not burned and skin on tomatoes slides off easily. In a molcajete or mortar and pestle, grind the garlic (skin removed) and the pepper with a little salt. Add the tomatoes and continue to grind, removing the skin as you go. Mix in the cilantro, diced onion, and salt and pepper to taste. Scramble the eggs in the usual manner and divide onto tortillas. Top each with salsa and some of the grated cheese. Serve hot.
