Breakfast Honey Muffins
Recipe By :Women's Circle, 1992
Serving Size : 9

1 cup all-purpose flour -- sifted
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup whole wheat flour -- unsifted
1/2 cup milk
1 egg -- well beaten
1/2 cup honey
1/2 cup cooked prunes -- coarsely chopped
1 teaspoon grated orange peel
1/4 cup salad oil *or* melted shorteningPreheat oven to 400 , and lightly grease 9 (2-1/2-inch) muffin pan cups.

In large bowl, sift the all-purpose flour with the baking powder and salt. Stir in whole wheat flour.

Combine milk and rest of ingredients in medium bowl. Add, all at once, to flour mixture, stirring only until mixture is moistened.

Spoon into cups; bake 20-25 minutes, or until nicely browned. Serve warm.
