EGGS SARDOU

toasted English muffins of flavor choice...I like sourdough
topped with sauteed, chopped spinach
each topped with one whole artichoke bottom
each topped with one poached egg
drizzled with Bernaise sauce

you may add bacon if you wish, or ham...if you really want to be adventurous...try some smoked or poached salmon!
