Recipe(tried): Spanakopita

This a great recipe for Spanakopita. I made it and kept eating it for the rest of the day. It will be fine for a couple of hours after baking for your luncheon.

1 lb Fillo/Phyllo
2 bunches fresh spinach
1 bunch leeks
2 bunches fresh green oinons
4 oz cottage cheese
1 lb feta cheese
5 eggs

Preheat oven to 350 degrees.

Chop spinach, leeks and green onions. Rinse and drain thoroughly. Beat eggs. In large mixing bowl, combine spinach, leeks, onions, eggs, crumbled feta and cottage cheese.

Place 8 sheets of Fillo in the bottom of a large pan, buttering each layer as it is placed. Pour half of spinach mixture into the pan and spread evenly. Lay one sheet of Fillo on top of mixture and butter. Pour remaining spinach mixture and spread evenly. Place remaining Fillo on top, buttering each layer as it is place.

Bake for 1 hour, or until Fillo is golden brown. Allow it to cool for 25 minutes.
