I found this a while back can't remember where but when I copied and printed it.
originally from:Country Gourmet (not sure what that means but want to give credit where credit is due)I added my own stuff, and my family loved this..said it tastes just like the restaurant Spanish rice.
SPANISH RICE
1 cup long grain white rice (Note: I have doubled this)
1 tbsp vegetable oil and it works great
1/2 medium onion chopped just remember to increase
1 chicken bouillon cube liquid (2 cups liquid to 1/2 tsp salt 1 cup rice etc.)
1 small can (5.5 fluid oz) tomato juice (not sauce)
1/2 green bell pepper chopped (optional) (this is my own addition)
1/2 tsp cumin (my addition)
1/2 tsp garlic (my addition)
1/2 tsp chili powder (my addition)
Cilantro, tomatoes, avocados (optional for garnish)
Place the oil in pan with rice and onion and pepper (if using) saute until rice is lightly toasted and vegetables are tender.
Add chicken bouillon cube and crush with fork in the pan with the sauteed ingredients add salt and remaining spices as desired, Pour tomato juice into two cup measuring cup add water to fill to 2 cups of liquid. Pour into the rice mixture, cover and turn the heat down to low simmer let cook for 20 minutes. When done , fluff with fork,
Garnish with chopped tomatoes and cilantro, or avocado if desired..
