I don't want to take credit for this recipe - I got it on the internet - may be even from this site, but I have tried it and it is very good. I did not use egg substitute since I did not have any - I just used two eggs. (I am not a vegetarian - just trying to lose weight and eat healthy.) I also used normal parmesan cheese (not fat free). I figure it is still pretty healthy.
Spinach, Mushroom and Barley Bake
2/3 C Barley (pot or pearl)
2/3 C Water
1 10oz package frozen chopped spinach thawed and squeezed dry
2 C sliced mushrooms (I sometimes cheat and use more)
2 cloves garlic pressed
1 1/2 C fat free cottage cheese or dry curd cottage cheese
1/4 C + 2 Tablespoons Fat Free Parmesan Cheese
1/2 Cup egg substitute
1 Tablespoon flour
1 teaspoon thyme
1/2 teaspoon freshly ground black pepper
1/2 onion chopped.
Cook barley until tender. Combine other ingredients except the 2T fat free parmesan cheese. Put in casserole. Sprinkle cheese over the top.
Bake uncovered 375 degrees for 50 to 60 minutes or until golden and bubbly.
