Recipe(tried): Springtime Ambrosia (using 7-Up)

Salads - Fruit, Gelatin
This gelatin salad is a pretty pink color, and not as sweet as most. Goes well with ham, so I serve it for Easter dinner. Grenadine is a non-alcoholic pomegranate syrup that is sold in the "mixers" section of the liquor department.

SPRINGTIME AMBROSIA

30-oz. can fruit cocktail
1 orange
1 large red apple
1/2 cup flaked coconut
1 envelope (1 tb) unflavored gelatin
1/4 cup grenadine (pomegranate syrup)
1 cup lemon-lime soda, room temperature

Drain fruit cocktail saving 1/2 cup syrup. Peel orange, removing all white pith, and cut each segment into fourths (smaller or larger, depending on size of orange). Dice the unpeeled apple. Mix together the fruit cocktail, orange, apple, and coconut.

In a small saucepan, add the unflavored gelatin to fruit cocktail syrup. Let sit for 2-3 minutes to soften gelatin. Stir over heat till gelatin dissolves. Cool slightly and add with the grenadine and soda to the fruit mixture.

Pour into a mold or pretty glass bowl and chill till firm.
