Recipe: Sri Lankan Fish Cutlets

When my daughter was in preschool, one of the teachers, from Sri Lanka, brought this to a potluck. They were so delicious that they got eaten up immediately. None of us could figure out the ingredients! "Fish cutlets" are a very popular dish in Sri Lanka.

Fish Cutlets
Serves 8

1/2 pound potatoes (about 2 large)
1 large onion, minced
oil for frying
1 12- to 15-ounce can salmon or tuna, drained and flaked
pepper
curry powder to taste
juice of 1/2 lime
1 egg, beaten
packaged dry breadcrumbs

Cook potatoes in boiling water. Peel and mash.

Heat 2 tablespoons oil in a large skillet. Add onion and saut until golden. Add canned fish and saut 3 minutes. Add mashed potatoes, mixing well. Season to taste with pepper and curry powder. Remove pan from heat and add the lime juice, mixing well.

Make 1" balls of the fish mixture. Dip in beaten egg, then bread crumbs.

Heat 1/4" oil in the skillet. Add fish balls and fry until golden brown. Drain well on paper towels.
