Recipe(tried): Salmon Cakes with Ginger

I usually don't like salmon cakes. But these are pretty tasty.

Salmon Cakes with Ginger
Serves 2

1 7-ounce can skinless and boneless salmon, flaked
1 egg, lightly beaten
1/4 cup fresh bread crumbs
2 teaspoons grated ginger
2 tablespoons minced shallots (the small French onions, not green onions)
nonstick pan spray

Combine all ingredients except nonstick pan spray. Form into 4 patties. Heat a skillet sprayed with nonstick pan spray. Saut salmon cakes until crusty and golden, 4 to 5 minutes per side. Serve hot or cold.
