Steak Stir Fry
1 lb. beef top round steak (cut into thin strips)
1 green pepper (sliced thin)
1 red pepper(sliced thin)
1 yellow pepper (sliced thin)
5 scallions (cut into 1" pieces)
1/4 lb. baby corn, halved lengthwise
4 garlic cloves (minced)
2-3 tsp. of chili powder
1 tsp. ground cumin
1/2 tsp. dry oregano
2 Tbs. lime juice salt & pepper
2 Tbs. corn oil
In a bowl, mix spices and oregano with a little salt and pepper with steak strips (rub into meat). Heat half the corn oil in a large saut pan on high heat. Add steak strips and stir-fry for approximately 3-4 minutes. Then remove steak from pan. Add the rest of the corn oil, and add scallions, bell peppers and garlic. Cook until veggies are crisp-tender, approximately 3-4 minutes. Put steak strips back into mixture. Stir in lime juice. Heat and serve.
