Good afternoon.Rosie, some may make a sponge cake. Some may consider a FORM OF A BUTTER CAKE LIKE "BISCUIT" (the French pronounce this cake "BEESK-WEE
However my choice would be a "GENOISE". A another french type of cake very very similiar to the biscuit.
As you probably guessed by now the cake decorations are by prof. pastry bakers. Presentation is everything on these shows. Be concerned on a well baked cake that tastes good more so then one that looks so good. I have a saying
"DON'T LOOK AT IT...JUST EAT IT !!!!.
I am certain if you ask Betsy for recipes for a BUTTERCAKE LIKE A GENOISE she will provide you with 2 or 3.
Some people have baked cheesecakes for their wedding cakes
I think that is a good idea.
