TUNA FRITTATA
4 large eggs
4 spring onions, chopped
85g (3oz) feta cheese, roughly crumbled
100g tin of tuna, drained
1 tablespoon oil
Beat the eggs in a mixing bowl, then stir in the chopped spring onions, the Feta cheese, and the tin of tuna.
Heat a tablespoon of oil in a medium non-stick pan. Pour in the mixture, then cook undisturbed on a low heat for 5 minutes until almost set.
Place under a preheated grill for 3 to 4 minutes, until set and golden.
