STRAWBERRY CORN CAKE
1 cup milk (can be skim)
2 Tablespoon sugar (can use sugar substitute equal to 2 Tablespoons sugar)
1 ounce enriched cornmeal
1 medium egg
1/2 teaspoon vanilla extract
1/2 cup strawberries, sliced
Preheat oven to 375 degrees F.
Heat milk and sugar in a saucepan. Bring just to a boil.
Sprinkle cornmeal into milk gradually, stirring constantly, until thickened. Remove from heat. Cool.
Stir in egg and vanilla. Fold in strawberries and turn into baking dish.
Bake for 40 minutes, or until cake is brown and firm. Remove and cool.
Makes 1 serving.
