Recipe: Strawberry Nut Mini Loaves with Strawberry Spread (using strawberry jam)

1 cup butter, softened
1 1/2 cups sugar
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
4 eggs
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1 cup strawberry jam
1/2 cup sour cream
1/2 cup broken walnuts
FOR THE STRAWBERRY SPREAD:
1 package (3 oz.) cream cheese, softened
2 tablespoons strawberry jam
Cream butter, sugar and extracts in a mixing bowl until light and fluffy. Add eggs, one at a time, beating well after each addition.
Sift together flour, salt, cream of tartar and baking soda; set aside.
In small bowl combine jam and sour cream.
Add dry ingredients to creamed mixture alternately with jam/sour cream. Beat until well combined. Stir in nuts. Divide batter among nine greased and floured 4 1/2-inch x 2 1/2-inch loaf pans.
Bake at 350 degrees for 50 minutes or until wooden pick tests clean. Cool in pans for 10 minutes; remove to wire rack.
Combine Strawberry Spread ingredients and refrigerate until serving.
Yield: 9 mini loaves
