Recipe(tried): Stuffed Cherry Peppers

i was looking for the same thing when i came across this on the food network site. enjoy!

stuffed cherry peppers -
provolone or mozzerella
proscuitto
marinated cherry peppers

remove stem and seeds from peppers
cut cheese into cubes small enough to fit into the pepper opening, wrap with some proscuitto and stuff into the peppers

marinade:
1 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tsp garlic, minced
1/2 cup fresh herbs (rosemary, basil, oregano) - i have also used dried herbs
black pepper to taste
mix together all the ingredients. pour over the stuffed peppers and marinate in refrigerator overnight. Store that in refrigerator. awesome!
