Recipe: Stuffed Peppers using Grape Nuts cereal, from General Foods Cookbook

Main Dishes - Beef and Other Meats
STUFFED PEPPERS

4 medium green bell peppers
1 (16 oz.) can stewed tomatoes, divided use
1/2 cup Post Grape-Nuts Brand Cereal
1/2 pound ground beef
1 small clove garlic, crushed (optional)
1 tablespoon (about) chili powder
1 teaspoon salt
1/2 cup grated or diced American or Cheddar cheese

Parboil stemmed and seeded peppers for about 5 minutes. Drain.

Combine 1/2 cup of tomatoes with cereal in mixing bowl.

Brown meat with garlic in skillet; blend in chili powder and salt. Stir into cereal mixture. Fill each pepper and place in shallow baking pan. Pour on remaining tomatoes; top with cheese.

Bake at 375 degrees F for 25 minutes. Makes 4 servings.

Nutrition Note:
"Buttered carrots deserve a place on the menu with these Stuffed Peppers. They're not only a low cost, readily available vegetable but they provide lots of Vitamin A which is important for normal bone and tooth formation and maintaining healthy eyes."
