Stuffing for Baked Stuffed Lobster or Baked Stuffed Shrimp
rec.crafts.textiles.quilting/Doris (1999)
6 tablespoons butter
1/4 tsp. paprika
2 tsp. chopped onion
1/8 tsp. garlic powder
1 oz. sherry wine (or more!)
1/2 lb. scallops
1/2 lb. shrimp
crabmeat can also be used if you prefer
1 1/2 cups bread crumbs (plain or seasoned)
4 tablespoons grated parmesan cheese
Melt butter in pan; add onions, paprika, garlic powder and wine; simmer for 5 minutes. Add scallops and shrimp and simmer another 5 minutes. Place bread crumbs & cheese in bowl, add simmered ingredients and mix well. Stuff lobster cavity (really pack it in) and bake at 350 degrees for about 25 minutes. If using shrimp, place shrimp in buttered casserole, place bread topping on top and bake at 350 for about 20 minutes.
