MARINARA SAUCE
2 cans (28 oz each) whole tomatoes
1 onion, finely chopped
2 carrots, peeled and diced
1 clove garlic, chopped
2 tablespoons vegetable oil
1 1/2 teaspoons sugar
1 1/2 teaspoons salt
Place tomatoes in batches in blender container; blend until smooth (or puree tomatoes through a food mill). Set aside.
In skillet, saute onion, carrots, and garlic in oil just until tender (do not brown).
Combine all ingredients in crock pot; stir well.
Cover and cook on Low for 6 to 10 hours. Remove cover, stir well and cook on High for the last hour for a ticker marinara sauce.
Makes about 6 cups
