Recipe: Sugar Free Chocolate Cake and Frosting (using Splenda)

SUGAR FREE CHOCOLATE CAKE

1 3/4 cups cake flour
2 cups Splenda
3/4 cup unsweetened cocoa powder
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
2 eggs
1 cup milk
1/2 cup unsweetened applesauce
2 tsp. vanilla
1 cup boiling water
Sugar Free Frosting (recipe follows)

Preheat oven to 350 degrees F. Spray 2 (9-inch) cake pans with cooking spray.

Combine dry ingredients in large bowl. Add milk, applesauce and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour into prepared cake pans.

Bake for 30 minutes or until toothpick comes out clean. Cool 10 minutes then to out onto racks to cool completely.

SUGAR FREE FROSTING

2 envelopes Dream Whip whipped topping mix
1 1/2 cup cold milk
1 package sugar free instant pudding mix (flavor is your choice)

Whip all ingredients for the frosting together till fluffy.
