Summer Fruits Trifle

8 oz mascarpone cheese
3 oz amaretti biscuits
2 tablespoons toasted filleted almonds
12 oz mixed blueberries, strawberries and chopped fresh peaches
2 tablespoons extra fine sugar
2 tablespoons icing sugar
Zest of 2 limes or lemons, grated
Cointreau (optional)
Mix fruits with extra fine sugar, let macerate until juices start to seep.
Lightly crush the amaretti and place on the bottom of a serving dish (drizzle a few drops of Cointreau over the amaretti if desired). Add the fruit.
Beat the mascarpone with the citrus zest, add the icing sugar to sweeten to taste. Spread over the fruits and finish off with a sprinkling of almonds.
