Recipe(tried): Sunday Dinner at Home.... Chicken Cobbler YaYa, Summer Squash Casserole, Pesto Pasta Salad, Chocolate Chip Cake
Menus Hi Everyone!
It has been raining off and on for a few days here in Central Florida but that's ok, we need it! It also is a great time to catch up on reading, antiquing or going to the movies....hardly any time any more to post for me! But you know to be perfectly honest, we have been enjoying lots of sandwiches and salads. Simple stuff for this hot weather. And, hardly anything worth posting anyway!
Tonight's dinner will be easy and one that we always look forward to as it is mainly "comfort food". We will be having:
Chicken Cobbler Ya-Ya
Summer Squash Casserole
Pesto Pasta Salad
Yeast Rolls and Butter
Chocolate Chip Cake
The Chocolate Chip Cake is the one I have been telling you about that my Mom's neighbor made. I have made it twice since getting the recipe and the last time I turned it into an Almond Joy Cake by simply adding a cup of grated coconut to the batter. Was it good? Oh my!! Yes!!
Here are the recipes:
Chicken Cobbler YaYa
Go and see the movie, come home, make this and enjoy...
serves 6
4 T. butter
1 med. onion, chopped
3 garlic cloves, minced
1/2 c. frozen green peas, thawed and drained
1/2 c. chopped carrots
1/4 c. flour
1 12 oz. can evaporated milk
1 c. chicken broth
1/2 c. dry sherry
1/4 t. black pepper
3 chicken breasts, boneless, skinless, cooked & chopped
3 T. parsley
1 t. thyme
1 refrigerated pie crust box (2 pie crusts)
1/2 c. chopped pecans
1/2 c. romano cheese grated
Melt butter in a skillet and saute onion and garlic til onionis golden. Add flour and cook stirring constantly, gradually add the milk, broth and sherry. Cook stirring for 5 mts. til thickened.
Add pepper and other spices along with the peas and carrots and remove from heat. Pour the mixture into a pan that has already been molded with one of the pie crusts. Top with parmesan cheese and nuts. Mold the other pie crust all around and fold edges under. Bake at 425 for 40 mts. til golden brown.Summer Squash Casserole
Easy and oh so very Southern.....
2 c. yellow crookneck squash slices
2 slices of onion, chopped
Put these into a small pot and barely cover with water, season with salt and pepper.
When they are done about 10 minutes on medium....drain, put everything in a bowl and add:
1/2 pint sour cream
1/2 stick of butter
1 c. grated cheese
24 saltines, crushed
Mix all this together well and put into a greased casserole. Bake at 350 for 20 minutes.
Pesto Pasta Salad
12 oz. box of tri-colored rotini
1 pkg. Knorr Pesto Sauce
1 c. fresh snow pea pods
1 small jar of artichokes, drained
1/2 zucchini, slicved and then halved
1 sweet red bell pepper, chopped
Prepare rotini according to directions. Drain artichokes and set aside. Prepare the sauce according to directions. Toss rotini with sauce, zucchini, pepper, artichokes and snow pea pods. Adjust seasonings and refrigerate before serving.
Chocolate Chip Cake
1 Duncan Hones Yellow Cake Mix
1 small bag chocolate chips
1 small box instant vanilla pudding mix
4 eggs
1/2 c. veg. oil
1/2 c. warm water
1 c. sour cream
In a bowl, mix the chips with the cake mix and pudding mix. Add eggs, oil, water and sour cream. Mix together with a wood spoon. Greasae and flour a Bundt pan and bake at 350 for 45 minutes.
Tastes homemade and very moist. Just wonderful!
