Recipe(tried): Sunday Dinner at our House - Easy Alabama Sirloin, Cheddar Mashed Potatoes, Easy Cornbread
MenusHi, everybody! We "think" that Hurricane Katrina is not going to hit us directly, but one never knows about hurricanes. School has been cancelled tomorrow because of the heavy rains and/or winds that we are predicted to have in our area. This seemed like a great day to make "comfort food."
Today for lunch we had:
Easy Alabama Sirloin*
Cheddar Mashed Potatoes*
Cream 40 Peas
Pickled Beets
Easy Cornbread*
Sweet Tea with Lemon
Fruit Pops

EASY CROCKPOT ALABAMA SIRLOIN
1 boneless beef sirloin steak (1 1/2-2 lbs) Cut into 5-7 portions
2 Tbsp. cooking oil
1 large onion, chopped
1 Tbsp. minced garlic
1 bell pepper, chopped (I used a yellow bell pepper)
1 can Swanson Chicken Broth (I used Italian Herb)
1/4 cup Worcestershire sauce
1/4 cup Heinz 57 Steak Sauce
1 tsp. fresh dill
Salt and pepper
1 can condensed cream of golden mushroom soup
1 can condensed cream of mushroom soup with roasted garlic
Heat oil in a non-stick pan. Place sirloin in the hot oil and sprinkle with salt and pepper. When the steak has browned, turn it over and salt and pepper the other side of the meat. Cook until beef is browned.
Place onions, garlic, and bell pepper in the Crockpot. Put the steak pieces on top of the vegetables.
Mix together the broth, Worcestershire sauce, Heinz 57 Sauce, and fresh dill. Pour over the steak.
Cover and cook on HIGH for 3-4 hours. After steak is done, remove it from the Crockpot.
Mix the golden mushroom soup and the cream of mushroom with roasted garlic soup together and pour into broth-vegetable mixture. Let cook for 15-20 minutes.
Place steak back into gravy mixture and serve.
**If gravy is not thick enough, mix 2 Tbsp. cornstarch with 2 Tbsp. cold water and pour into gravy. Stir until cornstarch mixture has been incorporated.
CHEDDAR MASHED POTATOES
1 1/2 pounds potatoes, peeled and cubed
1 1/2 cups Cheddar cheese
1/4 cup milk
2 Tbsp. butter
Salt and pepper
Place potatoes in a large pot and cover with cold water that has been salted. Bring to a boil. Reduce heat and cook for 20-25 minutes or until potatoes are done. Drain.
Add cheese, milk, butter, and pepper. Mash the potatoes until they are smooth. Taste and see if potatoes need more salt and/or pepper. Adjust seasonings.
Serve potatoes with Easy Crockpot Alabama Sirloin.
EASY ALABAMA CORNBREAD
2 cups buttermilk cornmeal mix (I used White Lily)
1 1/4 to 1 1/2 cups milk or buttermilk
1 large egg, slightly beaten
1/4 cup vegetable oil
Preheat oven to 425 degrees. Grease an 8 or 10 inch skillet with PAM.
Mix cornmeal mix with the other ingredients, stirring just until moistened. Batter will be lumpy. Pour batter into greased pan.
Bake for 20 to 30 minutes or until a knife put in the middle of the cornbread comes out clean.
FRUIT POPS
Try Breyer's, Dole's, or Welch's Fruit Juice Pops. They are refreshing and are only 30 calories each!
