Susan's Meat Loaf
This is from an old Good Housekeeping Cookbook. This is the one I make when I don't have the time or ingredients for the more sophisticated recipes in my collection. It halves beautifully. You can substitute a 14 cup of minced green pepper for the green onion or use both.

Makes 8 main dish servings

2 lbs ground chuck
2 eggs
2 green onions, minced
1 medium-sized onion, minced
2 cups fresh bread crumbs (4 slices white bread)
1/4 cup milk
2 tablespoons prepared white horseradish
2 teaspoons salt
1 teaspoon dry mustard
3/4 cup catsup, divided
green onion for garnish

Preheat oven to 400 degrees F. In a large bowl, mix ground chuck, eggs, minced green onions, onion, bread crumbs, milk, horseradish, salt, mustard and 1/4 cup catsup.
In 13x9-inch baking pan, shape meat mixture into a loaf about 10-inches long and 5 inches wide, pressing firmly. Spread remaining 1/2 cup catsup over top of loaf. Bake meat loaf 1 hour. Garnish with green onion.
