Hi Carrie,
Since we aren't getting any responses to your request yet I thought I'd post three recipes for you to look at in which the jam is added before baking. Maybe you can experiment with the dough to get the sandwich/shape you want and turn out something similar. We'll keep our fingers crossed for the exact recipe to show up!
Easy Swedish Cookies
3/4 cup margarine
2/3 cup sugar
1 egg
Raspberry jam
2 cups flour
1/2 tsp. baking powder
2 tsp. vanilla
Cream together margarine and sugar. Add egg and vanilla and beat smooth. Sift together the flour and baking powder and add to the sugar mixture. Divide the dough into four parts. Roll each part into a strip about 14" long. Place on an ungreased baking sheet, two strips per sheet. (They spread in baking.) Make a depression about 1/3" deep the entire length of the strip with a knife handle. Fill the depression with jam. Bake in a 350 degree oven until light golden brown, about 15 minutes. While warm, cut into bars. Cool before removing from cookie sheet.
Swedish Gem Cookies
1 cup butter
1/2 cup sugar
2 eggs
2 cups flour
2 egg whites
2 cups ground nuts
Raspberry jam
Cream butter and sugar. Add egg yolks. Beat well. Add flour and mix well. Chill dough for easier handling. Make small balls of dough and dip in slightly beaten egg whites. Then roll in chopped nuts. Place 1 1/2 inches apart on greased cookie sheets. Flatten with a glass bottom dipped in sugar. Make a small indentation in the center of each cookie and fill with jam. Bake at 325 degrees for 12 to 15 minutes or until lightly browned.
Swedish Butter Cookies
1/2 lb. butter
1/2 cup sugar
2 egg yolks
3 cups sifted flour
1/2 tsp. brandy extract
Strawberry, raspberry or apricot jam
Mix all ingredients, except jam, in order listed. Let stand 5 minutes in refrigerator. Make small balls about 1/2 inch in diameter. Place on ungreased cookie sheet and with fingers make indentation in center of each cookie and fill with jam. Bake in 350 degree oven for 10 to 12 minutes. Cookies should be light brown on bottom.
