SWEET POTATO PONE
2 cups finely grated raw sweet potatoes
1 cup evaporated milk
2 eggs, well beaten
3/4 cup dark corn syrup
1/4 cup melted butter
1 teaspoon grated lemon rind
2 teaspoons lemon juice
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 cup brown sugar
Mix the grated sweet potatoes with the milk to prevent discoloring. Combine the ingredients in order given. Pour into a greased shallow baking pan. Bake in a 350 oven for 30 minutes; stir with a fork. Bake 15 minutes longer or until browned and crusty on top.
Serves 6.

This is a recipe from the Gullah, who inhabit the islands in the South Carolina Low Country

2 tablespoons margarine, melted
1/2 teaspoon salt
1 cup dark cane sugar
Peel and grate sweet potatoes. Add other ingredients and mix thoroughly. Pour into greased baking dish and cook in slow oven at 300 degrees F until done, about 1 hour.
