Recipe: Szechuan-Style Fish Fillets

SZECHUAN-STYLE FISH FILLETS

2 Tbsp. oil
1/2 Tsp. minced fresh ginger root
2 Cloves garlic, minced
3 green onions (whole), minced
1 to 2 fresh chili peppers, chopped
5 Tbsp. dark soy sauce
3 Tbsp. ketchup
3 Tbsp. dry white wine
2 Tbsp. sugar
1 Tbsp. water
1 Tsp. white vinegar
4 red snapper fillets (about 7 oz. each)*

Heat oil over medium heat in small skillet. Lightly brown ginger, garlic, onions and chili pepper. Stir-fry as they cook.

Add remaining ingredients, except the fish. Cook until sauce is heated.

Brush red snapper with oil; cook on a greased grill until fish begins to flake.

Place fish on plates or platter and pour heated sauce over top.

*You may use any other fish fillets you like.
