Recipe: Texas de Brazil Marinade (using fresh herbs and white wine)

TEXAS DE BRAZIL MARINADE

This is the marinade the chefs at Texas de Brazil use on lamb, pork and chicken.

2 cups vegetable oil
1 cup white wine
3 tablespoons chopped fresh garlic
3 tablespoons chopped fresh sage
2 tablespoons soy sauce
2 tablespoons chopped fresh rosemary
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh Italian parsley
1 tablespoon paprika
1 tablespoon chopped fresh mint
1 tablespoon onion powder
1 teaspoon ground cayenne pepper
1 teaspoon ground black pepper
1 teaspoon ground white pepper

Blend all ingredients with a hand blender.

Use to marinate lamb, beef or chicken.

Makes about 3 cups of marinade
