I DO NOT KNOW WHAT YOUR RESORCESS ARE BUT, I PREFERE USING A TILT SKILLET OR A 30 QT STEAM JACKET.

12 MEDIUM DICED SPANISH ONION
2 CUPS CHOPPED FRESH GARLIC
25 POUNDS GROUND BEEF
5 POUNDS COOKED RED BEANS
1 POUND DRY POWDERD RED CHILI
APROX 5 GALLON WATER
5 CUPS TOMATO PASTE
2 CUPS CHOPPED FRESH CELANTRO
SALT/PEPPER/CUMIN TO TAST

10 POUNDS SHREDED CHEDDAR FOR GARNISH

COOK FIRST 5 ITEMS TOGETHER, IN ORDER, TILL GROUND BEEF IS COOKED. THEN ADD NEXT 4 ITEMS AND FINISH LIKE A SOUP.

THIS IS A VERY BASIC RECIPE. HOPE IT CAN HELP. THE LOCALS AROUNG HERE SEEM TO LIKE IT ALBUQUERQUE.
