Thai Salad Dressing

When I'm making peanut sauce, I generally go with the recipe for Thai Salad Dressing from the Moosewood Cookbook. (I'm fortunate to have the revised edition; my sisters both have older editions, and THEIR cookbooks don't contain the recipe.)
1 Tbsp good peanut butter
1 cup boiling water
1 Tbsp cider vinegar
1 Tbsp sugar or honey [I use sugar. Someday I'll try palm sugar.]
1 to 1 1/2 tsp salt
3 to 4 medium cloves garlic, minced
crushed red pepper or cayenne to taste [I use about 1/2 tsp]
2 tsp lemon or lime juice
Place the peanut butter in a small bowl. Whisk in the water, and beat until well combined. Stir in remaining ingredients.
