Tuna Macaroni Salad in Tomatoes

1 1/3 cups uncooked elbow macaroni, cooked, drained
1 6 1/2 oz. can tuna, drained and flaked
1 cup diced cucumber
1/2 cup diced green pepper
1/2 cup sliced green onions
1/4 cup minced fresh parsley
1/3 cup mayonnaise
2 teaspoons dried Italian salad dressing mix
1 tablespoon lemon juice
6 medium tomatoes

Combine macaroni, tuna, cucumber, pepper, onions, and parsley. Mix gently.

Combine mayonnaise, salad dressing mix and lemon juice. Add to macaroni mixture and toss gently, seasoning to taste with salt and pepper. Chill.

Core tomatoes. Cut each into 6 wedges, cutting to but not through the base of each tomato. Spread wedges apart slightly and spoon tuna mixture into each. Garnish with additional chopped parsley.
