For leftover ham, our family favorite has always been scalloped potatoes and ham, but I did see a recipe posted for that (if you haven't already, just type "ham" as the keyword in the search box).
Some suggestions I found in a cookbook include:
Wrap thinly sliced ham around asparagus, green beans or broccoli and serve with mustard mayo.
Make sandwiches from ham, cream cheese and chutney.
Stuff artichokes with chopped ham, sauteed mushrooms and cream sauce.
Make a salad with chunks of ham, bleu cheese and walnuts on greens with a honey-mustard dressing.
Make a casserole of creamed mushrooms, olives, chopped ham and mustard, top with a biscuit crust.
Cube ham and mix into omelets or scrambled eggs.
Other ideas I use at home include making a pizza (could be very easy with purchased crust and sauce). My husband loves ham and pepperoni, my sis and I like ham, pineapple and black olive or ham and sauerkraut. All of course with mozzarella cheese.
One salad I make quite often is cubed ham with a small type of cooked pasta (like bow-tie or shells), some frozen peas(thawed)or I suppose canned would be ok, maybe some tiny pieces of carrot or celery, whatever is handy, and cubes of gouda cheese (which I just learned from a Dutch friend is pronounced "how-da"), mix with a mayonnaise-based dressing, use whatever herbs or amount of sweetness you like - this one always turns out tweaked a bit based on my mood!
