CREOLE RED BEANS WITH SAUSAGE
1 lb. dried red kidney beans, soaked overnight
6 cloves garlic, peeled and pressed
1 to 1 1/2 lbs sausage links or patties* (I substitute smoked sausage)
6 green onions, chopped
1/8 tsp onion salt
1/8 tsp garlic salt
Salt and pepper, to taste
Water, as needed to fill cooker to 3/4 capacity
Hot cooked rice (for serving)
Rinse and drain soaked beans. Put everything, except water and rice, in crock pot. Add water to fill cooker to 3/4 capacity.
Cover crock pot and cook on HIGH for 2-3 hours, then turn to LOW and cook 3-4 hours longer. Stir 2 or 3 times. Mash a few beans toward the end of cooking time to make a thicker gravy.
Serve over rice.
*It is not necessary to brown bulk sausage first.
