Seven Minute Icing
2 egg whites
3/4 c. sugar
dash salt
1/2 c. white corn syrup
5 T. cold water
1 t. vanilla
Place the first 5 ingredients in a double boiler. Beat with hand mixer over medium heat until thick enough to spread. (it will look kind of like marshmallow cream). Add cold water to bottom pan and add vanilla and finish beating. This sounds like a lot of trouble but it is really very good.
