Recipe(tried): Vanilla Pudding and Pie Filling

Makes a great coconut cream pie too- add some toasted coconut to recipe and put in pie shell.

Vanilla Pudding

3/4 cup sugar
4 tbls cornstarch
1/2 tsp salt
3 cups milk (I use half and half)
3 egg yolks (lightly beaten)
1 tbls butter
2 tsp vanilla

In medium saucepan mix sugar, cornstarch and salt and stir well. Gradually add milk mixing till smooth. Over medium heat bring to boiling stirring freguently. Boil 1 minute. REmove from heat. Stir 1/2 milk mixture into egg yolks to temper and then add all back to saucepan. Mix well. Return to boiling- stirring frequently- boil 1 min. Remove from heat and gently stir in butter. Put into bowl and refrigerate- about 2-3 hours.

Its delicious!!! Could eat the whole thing!! SHould be great in homemade creampuffs.!!
