Recipe: Velvet Salad (using Jello, fruit, and pimento cheese spread)

VELVET SALAD

FOR THE SALAD:
1 (3 oz.) pkg. lemon Jello
1 (3 oz.) pkg. orange Jello
2 cups boiling water
1 to 1 1/2 cups cold water
1 (20 oz.) can crushed pineapple, drained (reserve juice)
2 to 3 bananas, chopped
1 pkg. miniature marshmallows
FOR THE TOPPING:
1 cup reserved pineapple juice
1/2 cup sugar
1 egg, beaten
2 tbsp. butter
2 tsp. flour
1 small jar pimento cheese
1 pkg. Dream Whip, prepared (or 1 cup Cool Whip, thawed)

TO MAKE THE SALAD:
Dissolve Jello in boiling water. Add cold water, stir in pineapple and chunks of bananas. Pour in a 13x9-inch pan. Cover with marshmallows. Let set until firm.

TO MAKE THE TOPPING:
In a saucepan, mix together reserved pineapple juice, sugar, egg, butter, and flour; cook over low heat until thick.

Add cheese; mix well. Let set until cold.

Mix prepared Dream Whip or Cool Whip with topping ingredients and spread over salad.
