Recipe(tried): Vichyssoise

Since fall is right around the corner ... I hope ... I thought maybe we could exchange favorite soup recipes. I love to make soup in the fall and winter and could use some more recipes. Here's my favorite for fall or summer ... it can be eaten cold and it's so simple and easy.

Vichyssoise

3 cups potatoes sliced
3 cups leeks (white part only) sliced
3 cans chicken broth
1 cup cream
Fresh Dill

Cook the potatoes in chicken broth until all is really mushy. You can either use a potatoe masher to mash it all together, use a food processor or a blender to mix it all up (depends on how smooth) you like it. Once this is done add the cream.

It can be eaten hot or I really prefer it cold ... especially for quick lunches at work. Top with chopped dill and fresh cracked pepper. Makes a great appetizer for a formal meal, too. It's probably not what you'd call low calorie!
