Recipe: Won Ton Ravioli

Won Ton Ravioli

I've made ravioli with wonton wrappers and found the wonton wraps produced a beautiful, light pasta accompaniment to the filling. Make sure to seal them well (dip index finger in a bowl of water and quickly run it around the perimeter of each wrapper). Don't boil them too long, they only need about 3 minutes.

I used the herbed ricotta filling as follows:

1 1/4 cups ricotta cheese
1/4 cup parmesan cheese
2 cloves garlic, minced
2 tbsp minced fresh parsley
1 tsp dried basil leaves or 1 tbsp fresh
1/2 tsp dried oregano
1 large egg
Salt and ground black pepper to taste

Mix all ingredients together and fill wrappers. Simmer for about 3 minutes. They are done when the pasta over the filling starts to wrinkle and the ravioli turn from opaque to translucent.
