Recipe(tried): Yoghurt Wheat Slice

yoghurt wheat slice

1 cup plain flour
1/2 cup self-raising flour
125g butter
1/2 cup caster sugar
1 egg. lightly beaten
2/3 cup lightly crushed weet-Bix
1/3 cup All-bran
topping:
2 x 200g carton fruit salad yoghurt
1/3 cup caster sugar
2 eggs, lightly beaten

grease 20 x 30 cm lamington pan, line base with paper; grease paper. Sift flour into bowl, rub in butter; stir in sugar and egg.
press mixture evenly over base of prepared pan.
bake in moderately hot (200F) oven for bout 18 minutes or until lightly browned cool.
combine all ingredients in bow. spread base with topping, sprinkle with combined weet-bix and all bran.
bake in moderate (180F) oven for about 40 minutes or until lightly browned and set. cool in pan. refrigerate for 30 minutes before cutting.
