Recipe: Almost Fat-Free Brownies

Almost Fat-Free Brownies

Makes 16 brownies

Here's a delicious recipe for brownies, for anyone watching their fat intake. I've made these several times, varying the extracts to change the flavours and they always turn out wonderfully. Very quick and (almost) guilt free way to satisfy a chocolate craving. I've added my personal comments in brackets

1/2 cup cocoa [I prefer the taste that Dutch-processed cocoa gives]
1/2 cup all purpose flour
1 cup sugar
1 tsp. salt
1 tsp. vanilla [I also add other extracts such as mint, rum, or some Grand Marnier]
3 egg whites
1/2 cup prune puree OR applesauce
1/4 cup chopped nuts (optional) [I don't use, as they add fat]

[The original recipe just said to mix everything together, but I've adapted that.]

Beat egg whites til foamy. Add prune puree/applesauce and beat a little, just to keep them airy. In another bowl, sift all the dry ingredients together. Sift dry indredients into egg white mixture and add extract(s) and nuts (if using). Stir just until everything is incorporated.

Preheat oven to 350. Spray an 8x8 pan with Pam, or other non-stick spray. Pour batter into pan and bake 25-30 minutes (just until brownies are springy to the touch). Cool, cut into 16 brownies, and eat.
