YOGURT AND MINT SAUCE
1 container yogurt
1 tbsp. dried mint finely ground
salt and pepper (to taste)
2 tbsp. Xenia Extra Virgin olive oil
1 tbsp. fresh lemon juice
In a deep bowl beat the yogurt with the mint and salt and pepper. Continue to beat adding the oil and lemon juice until well mixed. Refrigerate.
Makes a delicious accompaniment to fried fish.
