Recipe: Zucchini with Dried Shrimp

Zucchini with Dried Shrimp

1 1/2 lb zucchini peeled and sliced
1 tsp salt
3 cloves garlic
3 Tbsp dried shrimp
3 Tbsp oil
1 Tbsp soy sauce
3/4 cup chicken broth
2 Tbsp oyster sauce
1 Tbsp cornstarch dissolved in equal amount of water

Sprinkle zucchini with salt.

Heat a wok. When hot add in the oil. Add the zucchini and garlic and stir fry for 1 minute.

Add the dried shrimp and the soy sauce. Add the broth and simmer on high for 2 minutes.

Add the oyster sauce and simmer for 30 seconds. Taste and season with salt or more oyster sauce.

Thicken with the cornstarch solution and serve.
