Recipe: Breakfast Burritos (using zucchini and mushrooms)
Breakfast and BrunchBREAKFAST BURRITOS
1 medium zucchini, sliced
1/4 pound fresh mushroom, sliced
1 bunch green onions, sliced
1 (4 ounce) carton egg substitute
1/2 cup nonfat cottage cheese
4 tortillas
FOR SERVING:
Sour cream
Salsa
Chopped fresh cilantro (optional, for garnish)
Salute zucchini and mushrooms in nonstick skillet. Add green onion and heat through. Pour in the egg substitute and cook until nearly set. Add the cottage cheese and heat through mixing well.
Stuff softened tortillas with mixture and roll up. Place in a baking dish.
Bake at 350 degrees F for 15 minutes until cheese melts.
Serve immediately with some sour cream and salsa on top. Maybe some chopped cilantro.
Makes 4 servings
