ISO: Boxed lunch ideas needed for a Sunday school thank you party

Planning a thank you boxed luncheon for a group of Children's Church teachers including some youth who serve as helpers. I am planning to serve chicken salad on some interesting rolls, but have no idea where to go from there to make it fun and interesting. I would like some container ideas too. I am planning to use a lighthouse theme for the luncheon.
