CARAMELIZED CARROTS WITH GRAND MARINER
1 (24 oz) pkg. baby carrots (fresh or frozen)
1/3 cup butter
5 tbsp. apricot preserves
3 tbsp. Grand Mariner
Minced fresh parsley
Clean fresh carrots and cook in small amount of boiling water for 10 minutes (or cook frozen carrots according to package directions). Immediately drain carrots. Run cold water over carrots to stop cooking and preserve the orange color. Set aside.
ABOUT 30 MINUTES BEFORE SERVING:
Melt butter in large skillet. Add preserves and Grand Marnier. Stir to dissolve. Reduce heat; add carrots and cook over low heat, stirring occasionally until the carrots are hot and caramelized.
Garnish with parsley.
Makes 6-8 servings
